Importance of cooking sprouts thoroughly to reduce risk of further E. coli O104 outbreaks

In Germany, the numbers of reported cases of haemolytic uraemic syndrome (HUS)/enterohaemorrhagic Escherichia coli (EHEC) have decreased, and the German authorities indicate that the vehicle of the bacterium responsible for the outbreak is bean and seed sprouts. The suspected vehicle of infection is germinated sprout seeds contaminated with an E. coli O104:H4 strain. Until the investigation has been finalised, EFSA advises consumers not to grow sprouts from seeds for their own consumption and to ensure that all types of sprouts are thoroughly cooked before consumption. Furthermore, consumers are reminded of the importance of basic food hygiene practices when preparing food.
